German Quark "curds, rubbish" has been proposed as the ultimate inspiration [Barnhart; Gell-Mann's parents were immigrants from Austria-Hungary]. George Zweig, Gell-Mann's co-proposer of the theory, is said to have preferred the name ace for them.
